Keita Akaboshi: Master of Sake Pairing

keita-akaboshiKeita Akaboshi knows a thing or two about Sake. In 1998, he moved to the US to work for a sake import company.  He was the first Sake sommelier in New York. He had been consulting many restaurant sake menus, including 3 sake bars in Manhattan NY.

Because he has a passion for Sake and was curious about pairing Sake with foods, he started to study pairing Sake with Western foods on his own for almost 20 years. His pairing method is unique and perfect! He can find a sake which pairs perfectly with any foods including desserts, like creampuffs or chocolate cake.

In 2015 Keita moved back to Japan and opened [AKABOSHI&KUMAGAI], a sake dining restaurant. The restaurant serves a Sake a pairing course, matched with Italian food and local seasonal ingredients. Chef Kumagai is a business partner in the venture. The restaurant was recently highlighted in a Vogue article as being “A hidden gem in the Azabu-Juban area… The well-selected sake pairing menu includes six different sakes from all over Japan.” You can find the restaurant at 7F, Coms Azabu-Juban, 3-3-9 Azabu-Juban, Minato-ku, Tokyo.
